Citric acid is widely used in many industries such as food, pharmaceutical, detergents, … etc …, as an acidifier, anti-oxidant and emulsifier, which are the main applications. Citric acid and some of its salts are produced by molasses fermentation, followed by extraction and purification stages and completed by concentration, crystallisation and drying steps to achieve the desired product.
